Red Velvet Cake/Cupcakes

 

I wanted to try my hands on Red Velvet Cake never done one, now remember I just started baking not to long ago. Well let me re-phase that, I baked when the kids was young but from a box.

I started to make fresh batter, flour, baking soda or powder, salt, eggs and you know the rest.  I went on the computer and saw a lot of recipes for all flavors. I dappled and dip and would make it my own.

This Red Velvet recipes I left it the same. Before I make it for the kids and grand babies I try out the recipes.  This red velvet cake was super moist and so soft. I had no choice to leave it exact.

I try to make small portion for the kids, unless they want a cake. I usually do cupcakes but this one I made a cake and took small a round cookie cutters. It  made it look so cute. It’s great to display on a table for an event.

I just love to make pretty stuff, whether is baking, cooking, head-piece or just arts and crafts. Go figure I have 3 daughters and 3 granddaughters. I always try to do my best on all  I do, especially when those grand babies ask me for something.

I’m going to give you the receipt for this delicious cake and remember it doesn’t have to be cupcakes. I did these for Valentine’s Day.

 

2 sticks of Butter (Room temperature)

1 1/2 cup of Sugar

2 ounces of Food Coloring, to your discretion

3 tablespoon of Cocoa Powder

Pinch of salt

2 Eggs

1 cup of Buttermilk

1 teaspoon of Vinegar

1 teaspoon of Vanilla Extract

2 1/2 cup of Flour

1 1/2 teaspoon of Baking Soda

Beat Butter and Sugar until light and fluffy

In a small bowl, make a paste out of Food Coloring, Cocoa, and Salt

1 cup of Butter Milk and 2 Eggs and whisk together, add 1 teaspoon of Vanilla and 1 teaspoon of Vinegar

Mix 2 1/2 cup of Flour and 1 1/2 teaspoon of Baking  Soda

Add Food Coloring Paste into Butter and Sugar,

Gradually add half of the Flour mixture

Add the Butter Milk mixture

Add the other half of flour mixture. beat all ingredients for about 5 minutes.

That easy, now remember I did a small cake to make these cupcakes.

 

Vanilla Cream Cheese Frosting

1 pack of Cream Cheese softened

1/4 Butter softened

2 tablespoon Sour Cream

2 Teaspoon of Vanilla Extract

1 box of Confectional Sugar

You can add some strawberries or just crumble some cake over it for topping.
