I decided to make Grilled Boneless Pork Chops and freshly made pasta. Fresh pasta is so much better than box pasta and so simple to make. My first love was and still is cooking.
Don’t cook as much any more, kids are big, some of them have their own family and the two that home never be home. So when I decide to make something simple and delicious to cook for me, which is not bad, I get to do whatever I want.
I love being home alone and just cooking and experimenting on dishes. I’ll have a cup of wine, or just whatever I’m in the mood to drink, I have a large collection of what my granddaughter Kylee calls, juice drink for big people lol.
If I can make it at home I will, meaning fresh. I love everything fresh as oppose to buying it done. I gives me pleasure to know I made it and of course it’s cheaper. I go a lot to the Vegetable Stand to see what they have on sale and yes I do buy vegetable on sale.
So what I do is removed the bone from the pork chops and seasoned it with, freshly squeezed Lemon Juice, Adobo which is found in every Latino’s home and sofrito (Cilantro, fresh Garlic, Onion and Green Pepper in a blender, you can add a dash of vinegar while blending or water). You can even leave it as a paste, what Italian call Pesto, we have sofrito. At times when I want that chunky texture to my sofrito, I put it what we call a pilon (small wooden bowl with a wood stick)and mash it up.
I put the pork chops with the Adobo and sofrito in a zip lock bag and let it sit for about 2 hours, let all that juice get in it real good. When is time to grill the pork chop I pat it dry. I have a small grill which on put on top of my gas stove. Add seasoning to your taste. When plated, add a dash of sofrito across the pork chop.
Ingredients for fresh pasta,
2 cups of Flour
3 Eggs
1/2 teaspoon of Salt
1/2 teaspoon of Virgin Olive Oil
Knead for about 5 minutes. If dough is too sticky, add a little flour. If dough is too dry add a little water. I don’t have a pasta machine, so it’s all by hand. I use Cake Boss line cutter. So much easier an oppose than a pizza slicer. Make sure to have a pot of boiling water with a dash of salt for your pasta.
Next step to this great pasta is a pan on the stove with Butter and Garlic, when pasta is cooked, drop it in the Butter and Garlic pan and just toss it around. When I plate it, I add a dash of Parsley.
Now for dessert I made a Yellow Cake with Strawberry Filling with freshly Whipped Cream.
Ingredients:
Strawberry Filling
2 1/2 cup of coarsely chopped Strawberries
1/2 cup of Sugar
2 1/2 tablespoon of cornstarch
Combine all together on stove for about 5 minutes.
Yellow Cake Mix
2 1/2 cups of All Purpose Flour
3 teaspoons of Baking Powder
1/4 teaspoon of Salt
1 1/4 cup of Sugar
3/4 cup of Butter
1 teaspoon of Vanilla
3 Eggs
1 cup of Milk
Mix Flour, Baking Soda and Salt
Beat Sugar and Butter with electrical mixer on medium speed. Beat Vanilla and Eggs until well blended. Add it on to the Sugar and Buter. Alternately add Flour mixture and Milk.
Put in oven at 350 for about 30-40 minutes or stick a tooth pick and if it comes out clean, than your cake is don.
Whipped Cream Frosting:
2 cups of Heavy Cream and 1 cup of Sugar. You can add more sugar if you want or if you want the Whipped Cream a little thicker. Apply to the cake and refrigerate.
