Shrimp Ceviche

If you love seafood or a shrimp you will definitely love the recipe.

I got 2 pounds of shrimp cut them up into 3’pieces each and the reason why is that you’re going to leave these shrimps marinating in freshly squeezed lemon juice but you will need to make sure that there is enough lemon to cover the shrimps so that means a lot of lemons. You keep the in the fridge over night, well I do but the citrus of the lemon cooks them and believe me when I say the taste is totally different if you cook them.

Now chop up some cilantro, scallions, tomatoes, cucumbers and onions and when that shrimps are cooked in that lemon you add all of this stir it and make sure all of these juicy ingredients are well mix. For dry seasoning I used Adobo and I measure when my heart says stop lol.

The flavor are just popping with the cilantro and lemon juice and I forgot I put in very fine chopped jalapeño peppers of all colors so every bit has a popped of all these flavors. I used tostadas with this recipe and added some avocado for topping. Bon Appetite!
